Antonia's cuisine is a means to explore her life. Her interest in food and cooking after moving from suburban Long Island to the diverse cultural landscape in Los Angeles. Cavatelli and Carnitas can be found to live in harmony in the menus, an idea that has developed over the years. What remains is her singular idea of the future and still wishing to reminisce about the old. Scopa Italian Roots is a restaurant which was established by Lofaso in 2013. The restaurant was opened by her due to her American-born Italian heritage. Lofaso's interpretation of old-school Italian is hailed by critics as being one of the most compelling places to enjoy Italian cuisine in Los Angeles. Lofaso is described by many as a local favourite that serves up meals that are delicious, authentic and inviting. Lofaso learned from culinary giants who used sophisticated techniques. However, she did not fear taking extraordinary risks in order to respect her intuition. In a short time her career, she was at the top in Wolfgang Puck's Spago. In the following years, she worked alongside many celebrities, as she transformed various Los Angeles restaurants. Lofaso along with Sal Aurora partnered in 2011 to create Black Market Liquor Bar Studio City. Through Black Market and the business collaborations she set up, she found her place to call home. Lofaso would find the freedom to be creative that she wanted through the collaboration. Black Market is not constrained by one definitive direction and that's the goal. This course would begin with potato chips flavored with dill, Shishito peppers, and continue with Korean wings. What binds this diverse array of flavors is Antonia. Lofaso evaluates her achievements over the course of her career based on her natural ability to understand her audience and remain true to her personality. The memorable performances on Top Chef Chicago & Top Chef: All Stars showed her personality outside the cooking area. Lofaso's talents are also evident in her recurring roles as the CNBC's Restaurant Startup judge, and on the Food Network's Cutthroat Kitchen Man vs. Child & ABC's Real O'neals. Lofaso teamed with Penguin for the release of The Busy Mom's Cookbook - 100 Recipes For quick Delicious Home Cooked Meals in 2012. This cookbook also tells about the struggles she faced while raising Xea as well as her studies in her school, the French Culinary Institute. Lofaso maintains that the driving force behind her achievements is her kitchen. Through this, she is always on the pulse.
